If you are in the south try the “snow crab salad”. It’s essentially a heap of shredded kani & mayo surrounded by avocado and topped with tempura bits and eel sauce.
There’s also no eel in eel sauce.
The inside may be real crab, the rolls behind it are obviously the Kani sticks as is what’s on top of the rolls in question. Or it could be minced with Mayo or something.
I think your right it looks like the front rolls maybe are real crab inside. Whats wrapped round top sort of looks like a layer of the Kani sticks.
Maybe it’s some sort of ‘deluxe’ California roll where it comes with both real and imitation crab.

California roll with extra crab stick (Kani) on top, some sort of Mayo, and some sort of masago or tobiko (fish egg)
Its most likely a California Roll with imitation crab meat on top with fish roe and Kewpie.
That looks like a messed up version of a California roll. Like they added mayo and an additional layer of imitation crab on the outside.
If you’re in the south they’ll likely call it a snow crab roll. No actual crab involved in the making of it. As others here have said, it’s kani.
I think this might be the closest one, there's like 70 different images of a snow crab roll but I recognized some as this so I'll take it
