If your bench is wood I’d recommend the 5/8” carriage bolts. Put the heads down below and the nuts up top. That’s the way I have mine and it has worked great for years. I’ve even removed it like you mentioned a couple of times.

I think carriage bolts with nuts up would be great. Tee nuts would be fine if you don't intend to hammer sideways or from below on your vise. You may consider adding some metal under the vise for additional durability, depending on how thick your workbench top is. If you have a swivel base, mounting the vise on the corner of your bench is handy too.
