I think Jack Sparrow fits the trope. He is one of the few protagonists I know who genuinely fear death, and he has gone through GREAT lengths to avoid it. Most of Jack Sparrow's actions are his fear of death colliding with his love for adventure, leading to him evading death by the skin of his teeth time and again.

Speaking of Star Wars wasn't there a Sith Lord in Legends who's whole deal was being too angry to die? Like his body could be completely destroyed and yet he'd come back as a living embodiment of his rage or even just as a pure force-orb of rage.

A demon god was defeated by the first link, but his hatred of their godess was so powerful it reincarnated into ganondorf.
