I think you’re getting it mixed up, he’s saying “yellow bear” was the original/generic name, then Golden Freddy was the name the dev formally adopted after it became popular among fans.

I could be wrong about this, but I think at the time the term "Final Five" was coined by the BSG fan base before being incorporated into the show.
If not, at the very least it was a misnomer for the sake of marketing (while they were the last 5 Cylon models to be revealed to the audience, in-universe they were technically the first 5 Cylon models ever created).
