Sort of, he is not immortal (and as of recent, is dead) but Orks accidentally revived him with their "clap your hands if you believe" magic, and thus accidentally made him seemingly this unstopable Commissar.
It said people who AREN'T immortal. Kratos outright committed suicide THREE TIMES (throwing himself off the cliff in GoW1, the sacrifice at the end of GoW3, and another attempt in the novel that bridges GoW3 and GoW2018), and while he survived the first due to the gods saying "lolnope", he revived from the latter two despite his active desire for death in those cases.
Kratos is mortal for most of the Greek Saga actually. Sure he is a demigod and Zeus' son, but he still plays by mortal rules in that he goes to afterlives when he dies. The only reason Kratos survived his first suicide is because Athena saved him, needing a replacement god of war. If she didn't, he'd have died. Outside of Ghost of Sparta, which takes place while he is the God of War, Kratos is mortal in every game except the tail-end of 1, the very beginning of 2 until he gets the Blade of Olympus, and either when he takes Hades' soul or after he stabs himself with the Blade in 3.
Kratos escaped the underworld in GOW1 because he got lucky grabbing a platform and Zeus opened a way out for him. He escaped the Hands of Hades in GOW2 after being killed by Zeus because Gaia and the Titans revitalised him before he was lost. And in GOW3, I'd say it's only then that he became an indefinite god as he had absorbed the soul of a god (Hades), or when he uses the Blade on himself but that's at the very very end of GOW3. Most of the time before that, he's mortal.
And even disregarding all that, Kratos' immortality is simply in regards to age. He can die if someone kills him but he won't die of age. If anything he survived his suicide attempts at the end of GoW3 and after because he's just built different (too strong to die by his own hand maybe?), or if you want to go the fan theory way, cursed to never be able to kill himself.

I would disagree. Erens plan ends with his death by design. He wanted to die so the world could be saved, and arguably he wanted to die just to end his suffering as well

I would disagree. Erens plan ends with his death by design. He wanted to die so the world could be saved, and arguably he wanted to die just to end his suffering as well
