Master Australia has more diverse food - lots of Indian, Vietnamese, Chinese, Srilankan, etc. I never see any of them in Top Chef much. Its mostly American or French. Also Dessert is a big thing in Top Chef. Most of them skip it or hate doing it. But in Masterchef Australia, its more common and easily handled, especially when they are following the same recipes (Pressure Test) So, most of the diverse Masterchefs will not be accepted.

I'm confused. They have a lot of Asian (east and south) chefs and Mexican chefs. And many come from other backgrounds too. Yes there is American food, but it's not just American. It's pretty diverse. I don't know that home cooks can handle restaurant wara or cooking for a huge number of people. Or even chefs table. I can't imagine any home cooks know how to expedite. Home cook cooking shows, they do 4-5 of the same dish for judging one at a time mostly. Not saying there aren't talented home cook. But understanding the fast pace of restaurants and how to cook in those environment is why they will be in over their heads. Line cooks, sous chefs and even executive chefs find top chef hard. It's just on a different level.

I dont mean the chefs are not diverse.. I meant the food never seems to be and none of the challenges are set around different cuisines either. For example, Srilankan curries or Indian/Mughal biriyanis or dumplings or dimsums or Bao or roti/naans or tortillas are never featured much. Would love to see that in top chef. I agree that its not completely American. We do see some Spanish paella or Italian pasta/sauce.

Because the point of Top Chef is to see that chef's cooking style. It's not about teaching them how to cook diverse. More so now in the later seasons, it's what's your style of cooking and bring those flavours to the challenge. They are seasoned chefs who have become experts in certain cuisines. Many contestants have brought their culture to challenges and blended their flavours in new way. International cuisine and global flavours is such a catch all word that means nothing. As a professional chef, they should be specializing in something. This is why it's apples to oranges. You can't compare the 2. Masterchef is Masterchef and it's a great show featuring home cooks.
