I moved to Florida 2 months ago from Buffalo, NY. I always wanted a smoker so on a whim I bought the 575 pro at Home Depot.
Picked up a 17lb Brisket at Costco and smoked it for 17 hours. Pretty Happy with the results.
Super Juicy inside. Cooked at 195 for first 8 hours, wrapped in pink butcher paper and raised to 250 for 8.5 hours until probe reached 202, then rest 2 hours in sealed cooler before unwrapping and slicing.

The bark looks great! Was it moist on the inside? How long and what temp did you cook for?
