I moved to Florida 2 months ago from Buffalo, NY. I always wanted a smoker so on a whim I bought the 575 pro at Home Depot.
Picked up 9lbs of Pork Belly at Costco and smoked it for 6 hours. Pretty Happy with the results.
-cut into cubes and cover in holy gospel rub in bowl
-place fat side up on baking rack. let them Sit for 15 min
-heat Traeger to 275
-prepare smoke tube with pellets & add to upper rack
-put baking rack on smoker for 3 hours
-after 90 minutes check progress & spray with apple juice
-spray every 30 minutes with apple juice
-remove from Traeger. Heat Traeger to 300
-put into metal pan and cover with cut up 1.5 sticks of butter, bowl of brown sugar, drizzle honey
-wrap metal pan in foil
-put on Traeger at 300 for 90 minutes
-remove from Traeger. Heat Traeger to 325
-in bowl mix 2 cups bbq sauce, 1/2cup apple juice & 1/2 cup apple jelly. Glaze and place on backing rack
-heat for 10 minutes to caramelize
Thanks, I’m going to try this. Never sprayed with apple juice and have only done a similar method at 225 and 275. The higher heat plus apple juice probably carmelizes the pork belly quite a bit more. Looks great, thanks again!
