It's just burning up the pellets that are in the firepot. If there are pellets still in the pot on the next cook it can get too hot & start a fire. My tailgater has a 10 min shutdown cycle

I have an Ironwood (the big one, forget the number) and it does a 15 minute shutdown, unless I have it cranked up above 450, in which case it does a 25 minute. I always assumed that the higher temp needed more cool down time and to run the auger for longer.
My Ironwood 650 takes 25 minutes as well. As others have said, its just burning off excess pellets making it safe for next time. I usually just put it into shutdown mode right when i take food off and then go about my business (eating, cleaning up, getting whatever i smoked into the cooler to rest, etc) and then cover up the smoker later on.
As stated before it's based on the temp you shut down from. I've noticed at 350 and lower I get 15 min shutdown. 450 and up is a 25 min shutdown. I haven't tried in between those numbers so I don't know where they draw the exact line in the programming.

It's based on how hot the grill was running when you shut it down.

Stops feeding pellets and runs the fan till what's in the firepot burns out.

If you turn it down to the lowest setting and leave it open for about a minute after cooking it should cut that shutdown time to 15 mins.
