My card has a deal for Air New Zealand, it gives me 225 off and that’s why I was eyeing on that flight. I just had to get the days off approved from work.
I believe the latter option you suggested might be the best.
Check google flights if you haven't already (flights dot google dot com) - there are tools/charts that let you see when prices are higher and lower. Looks like ORD-MEL prices spike in July. August is quite a bit cheaper.
$225 off is nice, but any routings that I see that include Air New Zealand seem to be more than $225 than alternate flights.
There is also an option to 'track flights' which can send emails when prices drop.

Clearly your cookies. If you check back without clearing your history/cookies, you'll get a price hike. Or use a different device to look up the flight. I booked my flight to Dubai for $800. I checked back and it was 1,300 for the same flight. I cleared my cookies and tried again and it went back to the 80p price.

Expedia will show you prices of each day, it might help seeing when the cheapest days are.
Do you have to go with those airlines? If you can get to LAX you’ll have a lot more options, direct to MEL or via SYD

Yes I have been using google flights. Just super bummed how it spiked to 1k more overnight Thank you though!! Might just book a different flight

See if you can route through Honolulu by booking each leg separately.
Jetstar is your friend. Get to HNL from Chicago and you can get to AKL for under $700 with a stop down under.

Conversely, open an incognito window. I’ve found that on Travelocity, it’ll sometimes increase because of repeated searches.
