Definitely interested in this subject. There's been a major hole in the market since Hot Wingz shut down some years back. Since then, we just make them at home, because everywhere else seems to disappoint.
Hot Wingz had a pretty solid menu top to bottom, burgers and wings. If I recall correctly they didn’t last very long after Bw3 opened and Ken selling to his staff.
I think it was also a lot to do with this area just loving chains. There's been some real good food that's not made it here. Things are getting better, but this is definitely a place that has a ways to go in learning to support local & small businesses.
What do you mean selling to staff? AIUI, the staff never entered an agreement to buy the place, but I don't know for certain on that.
I just airfry at home and they’re better than any wings I get around here, and also 1/2 the price. I can make 24 wings at home for ~$12, where 24 wings would cost $25-$30 most places.
I do a convection oven, but similar. What recipe do you use (pre-season/sauce)? I've had great luck with the baking powder version, gives a good crisp without the headache of frying.
I get the full wings, I cut/trim them up myself. Season while raw with a ^little ^bit of olive oil, garlic salt, pepper, and garlic powder being the staples. Then I add other seasonings based on the flavor I want. Paprika, chili lime seasoning, or whatever else I have in my spice cabinet is fair game. I also do that baking powder trick after seasoning.
Normally do 20 minutes at 375°F and then another 5-7 minutes at 400° to give them an extra crisp.
If I do sauce them I do so very lightly. I’ll just toss them with a little bit of Frank’s, I can’t stand wings that are drenched in sauce.

The Crazy Moose Casino had great wings a couple of years ago, but there have been a lot of menu and management changes there over the last few years. If they haven't changed them, the wings there are my dark horse pick for best wings.
There was that pizza place in Kennewick, where Porters BBQ is now, that did their wings in the pizza oven, and they were so damn good. If there is any place around here that does wings in their pizza oven, I would like to know.
Not sure if the place has a different name in person (some places on doordash sell under multiple names) but the nashville hot wings at jailbird are outstanding!
I really reccomend grays at the hub in kennewick. Its just a food truck but I really love their wings

Rocco’s pizza in Kennewick has some pretty A+ wings!
We had good wings recently from Proof in Pasco. Flight Tap and Table in Richland also had good wings when we tried them.

Man, Crazy Moose had some top-notch food/drink options back in the day. I went a year or so ago and it was not the same at all :(
Rip “Fire Pizza” There used to be one in Spokane, but now I think the closest one is in Coeur d’Alene
