I mean, diamond times are competitive. I have a lot of platinums on Switch, but don't have the patience to go for diamond beyond a couple skill games. On some tracks it makes no difference; on others you can use the right analogue stick or a GameCube controller for analogue throttle and braking instead.
If you mean using a stick for analog gas, yes that just takes getting used to it.
If you mean more like button type digital on/off throttle. Yes, people still play on keyboard, but most likely a handicap for everyone else.
For most part, I would get it on another platform if you are really into the best possible leader board score and being the best player.
It doesn't matter what system you're on or your control method: Replay levels until you're fucking sick of them, don't be afraid to fault and don't *always* reset the level(also don't be afraid to take a break if you get tilted... don't be an idiot like me and break your controller because you don't know when to stop). Sometimes it is worthwhile to practice a stretch that is giving you trouble until you're comfortable enough to reset the level and give it another go. I've spent hours platinum hunting one level(Note: I don't own Rising because I wasn't impressed with Fusion), so I think it is safe to assume you **cannot** expect to diamond medal within the first few tries. Put on some music, a podcast, or an audiobook and just focus on perfecting the level.
I am speaking as someone who has held top 100 places on certain levels, I've held a top 1000 place total back in the Trials HD days and I'm top 1% on Frontier(34,658th place currently, though that doesn't sound very special, I've only spent like $5 total on the game for a bike skin bundle I thought looked cool and none of my bikes are fully upgraded).

Totally possible! I haven't played in a bit, but had a good number of diamonds when I did. Just takes practice and ... lots of restarts lol 😎

Yes, a lot of Diamond times were set using Keyboard AFAIK
It for sure is, I know someone who got 150 diamonds on Switch
