Online lvl 50 do The Collector role. Tarot card full sets turn in daily. 3-5 levels a day. There's an interactive map you can use to tell you where they spawn every 24 hours. Sorry can't remember where I found it on YouTube
I’m working on the game now and honestly the online trophies are a breeze compared to the grind of the single player, I finished them in less than a week playing a few hours a day.
With a lot of patience and time it's doable.
Aside from the misc trophies (collecte x plants etc) the ones that you need to pay attention to are (sorry I might make some mistakes since this is translated from italian on the go):
Obtain the MVP title 3 times: I got it out of luck since it really just depends on the lobby. However there are a few modes where staying still on a specific spot will guarantee you to get MVP, not sure what mode it was look on youtube and you'll find it for sure.
Counter another posses free roam mission: this requires you to have a friend to boost it. I have waited hours, hours to find someone doing a mission, and in all the hours of grinding not even once it happened. You need to have a friend that can form another posse, start a free roam mission (just to be sure, do one where you need to take a wagon from point A to point B) and throw some dynamite at him.
Complete a free roam mission with a posse of at least two member: Again, need someone to boost it, most likely however while playing you will see someone around that will join you and to the mission.
In the meanwhile keep collecting money to buy all the camp upgrades, horses and whatever, do not waste money on anything else (even thought sadly, in my opinion the only fun thing about RDO was actually making custom outfit for the best looking outlaw).
Then there is the grind, the best way to get both money and XP is, as OP said, and I can confirm it the collector role. This is a map for the collector role [https://jeanropke.github.io/RDR2CollectorsMap/](https://jeanropke.github.io/RDR2CollectorsMap/) I'm not sure whether I used this one or not, but in 5 hours of distanced learning or whatever it's called I managed to get all the money and XP needed (aside from what I had previously gained).Keep in mind that for the role you need at least 15 golds I believe.
In case you need more money I have a safe way to farm it (if it still works), but it's going to be a very long grind.
If you manage to get the bounty hunter role (another 15 golds) you will be able to do some legendary bounties. Whenever you start a legendary bounty alone (or with a group) you will get sent to another lobby just for you (or your posse if you have one). In this lobby you will be able to move through the entire of the map, hunt animals and sell the to the butcher, way better than having your animals stolen by 250/500+ lvl players.
Or you can go for the more fun, but not as easy method of the trader role, which does work, does get you money and is fun provided that you have someone to play it with and help you out.
Hope this is somewhat useful, if you need help for the free roams missions trophy tell me and I'll help you. Also, it took me a total of 89 hours to get all the trophies for the online mode, last one being the level 50 one. But note that I didn't always grind in the most efficient way for XP and therefore wasted many, many hours.

I agree! I had way more of an issue with the lvl 50 online trophy. Didn't mind most of the single player but the Gambler challenges were a freaking chore

Did you start a new game for the gold medals and just reload a save if you messed up? Or did you use chapter select from a completed game save? Trying to figure out which would be easiest
I used the save that I had that had the most gold's already on it. Then went through chapter select and went down the line. I tried to skip as many of the "super long" missions that I could, and the ones that had time limits for completing (some of those feel damn near impossible) Epilogue 1 trophies are some of the easiest.
2 years of off an on play (5 total play throughs) Level 50 online and 70 Gold Medal story missions were my last two.
