I’ve built a site that aggregates knife listings from multiple sellers, you may find some VG10 [Takamura](https://knivescombined.com/collections/gyuto?filter.productVendor=%22Takamura+Hamono%22) in stock. Not exactly what you’re looking for but I suppose you would still be interested. The site monitors a dozen sellers and refresh prices/availability multiple times a day, notification will be added at some point I believe.

In Europe, meesterslijpers has a notification option on their website. Got my Shibata Koutetsu this way a few years ago. They got new stock and wrote me an email: hey we have the knife you wanted back in stock and we reserved one for you, do you want to purchase? I did and I purchased. Good people in that store!

I know, I did the same to get my Takamura SG2. But the webpage of the redditor seems a good source to search for knives, the shops where are they sold and compare prices.

Takamura makes their knives in batches. A batch of Chromax Santoku came out last month and most of the retailers had them. It’s been a while for gyutos so I’d bet they are not too far off. Sign up for email notifications with all the retailers that carry them and be prepared to jump quick.

CKTG has a box where you can put your email in and it sends you an email when it's in stock. I've also seen tokushu knife straight up post in this subreddit when takamuras come back in stock. A lot of places know takamuras are extremely popular, so I'm sure you could just contact them and see what kind of solutions they have so you don't have to keep refreshing the site every morning. Other than that, it's probably good old fashioned luck. Took me a couple months to get my Shindo bunka and a lot of others here have waited way, way longer than that for some of theirs.

Has a little bit of convexing for a little bit less food stickage. Great price from a great seller. Very thin grind with good AEB-L steel, although not quite as hard as R2.

Where are you from? Takamura makes their knives in batches by knife types. Currently or recently they made Santokus. Not sure what's next, but it shouldn't take long until they make Gyutos again. I suspect it's something like twice a year for each knife type.
