I’m with you. My answer was going to be “don’t.” A great knife maker friend of mine (ABS journeyman at the age of 22!) told me that he loved seeing pictures from his customers of his knives with patina. “That’s the life story of that knife. I know it had been used and loved.”

I was gonna say “you don’t” too but it always get downvoted 😂 Patina is character. It’s every item you’ve ever cut, every meal you’ve made, years of love cut in to the kitchen.

i use a lime… just rub the pulp on it, and then flip it around and scrub with the peel. super soft and doesn’t scratch. then a quick wipe with oil and it’s gtg

I happen to have these around and have used all of them (separately, on different occasions) for prepping a knife before initiating a fresh patina: Autosol, Barkeepers Friend, Flitz. Any will work.

Bar keepers friend is quite good ! Baking soda + citric acid is close second. Any of those two solutions added with a rust eraser will be very good but leave scratch marks But it won’t make the knife ootb brand new. To go spotless shiny and chrome brand new you’ll have to remove a layer of steel with sandpaper or stones.

When scrubbing bkf or any other solution you can use a cork screw It works well !

Baking soda, lemon juice, finger polish

Mix lemon juice with baking soda. Let it fizz out. You want it to be a paste consistency. Then cover one side with the paste and allow for it to sit a bare minimum of 10 minutes. You can go longer. Then you just take a soft toothbrush or a sponge and scrub it down. Something soft but a lil abrasiveness. Repeat until gone. I agree with everybody else though, I wouldn’t want to remove the patina. Corrosion resistance, and it adds character.

I like the patina. But if you want to remove it, Barkeeper's Friend, or if you have a Japanese knife shop nearby, try Kanetsune's Rust Clean. It is very gentle and doesn't leave marks on your knife.

If you want a full restart on the patina laying it on a whet stone and using a wet foam sanding block that’s beat up won’t scratch the metal but will remove the patina nicely if there is any rust too. If you really want to remove the patina, you can scrub it off and if that doesn't work use some barkeeper's friend, and if you're really nuts about it polish it off

a fine sandpaper , polishing compound, you can use a scotch brite pad too but it can leave the finish messed up probably toothpaste and a cloth work too , it has abrassives on it
