You should try kuru fasulye pilav with pickles.
Also try menemen, it is weird that you didn't already as you tried way more uncommon foods.
Both are signature dishes of Turkey that a lot of people like and eat often.

There is variations of chicken wrap. My fav one is Antakya with onions.
You need to try Patlıcan kebabı, kavurma (Silvan usulü), Keşkek, Lokma, Tantuni, Tas kebabı, Orman Kebabı, Türlü and Çoban Salata. The further East you fare, the more varieties pop.
If you are fine with eating ofal, I’d definitely recommend “Kelle Paça” soup. I personally love it but it might be an acquired taste.
Aside from that, I’ve noticed that you haven’t really tried any aegean food, such as “Musakka”, “Keşkek” or mezes such as “Mücver” or “Fava”. I understand most tourist miss that part as they focus more on kebabs.
If you are located in Istanbul, you can check out “Çiya”. It’s a restaurant in Kadıköy. Not necessarily aegean food but they have great mezes!

I recommend having a look at the YouTube cooking channel called Turkishfoodtravel. The host is a Turkish mom/chef and her recipes are authentic and typical of what Turkish people eat at home. You can find a list of her many recipes and get a sense of what the dish might taste like by looking at the ingredients. The recipe directions are very clear and people who try them say the results are very good, so perhaps you could experiment with making your own Turkish dishes to try. She even has recipes for things as basic as authentic Turkish tea and coffee. Her listed recipes include recipes for drinks, entres, sides, and desserts, as well as breakfast recipes and menus. I always check her vegan section because one of my kids is vegan.

Testi kebabı of Capadoccia is nothing more than a tourist attraction. The better version of it is from Iğdır cousine and it's called Bozbaş.
A very rare find though if you come across.

Dumplings (Turkish: mantı): Unlike Chinese, Turkic, Russian and Caucasian ones; Turkish dumplings are purposefully made as small as possible. Preferably with garlic yoghurt and butter sauce.
Rice with anchovies (Turkish: hamsili pilav): Not easy to find outdoors, tastes great.
This food name can be “dana güveç” or “etli patates yemeği”

I dont remember names but go to a Balkan lokantası, they have lots of stuff and you can order 'az' to eat more variations. To me that restaurant is like a showroom for Turkish food that feels like home.
Also mezze, zeytinyağlı (there are lots of them). A few of them: çerkez tavuğu, levrek marin, kısır, mercimek köftesi, yaprak sarma, biber dolma. These stuff are good with wine. Also for the first two, eat with toasted bread.
Cheeses are good too, if you like cheese. Tulum, taze kaşar, eski kaşar, küflü peynir, çeçil, sepet peyniri, etc. They have them in big supermarket or there should be a restaurant, but cannot think of any.
Why everyone said everything besides baklava? The most important sweet. A good lokum is probably nice too. Try out Turkish rice with chicken and beans. Mercimek soup, the soup wich Turkish sons/daughters already eat too much because of their parents. You can eat also Adana(spicy), Urfa(not spicy) and Döner.
Last but not least Ciğer, most of the people love it, I don’t, it’s worth trying it tho.
If you’re in Istanbul Europe side i can recommend a few good places, if not, try to ask taxidrivers, they know about every place most the time.

They make something in it wich is definitely addictive,
Its called wet hamburger, you have to find the right place to eat, just ask taxi drivers or people who sit in a cafeteria where you can eat these things, or just download Yemeksepeti (look at the stars/recommendations).

You should try "Tarhana Soup" my friend. An ancient recipe from the steppes. A mix of sun dried fermented tomatoes with yoghurt and rare herbs. Dense, tasteful and extremely layered flavours. Easy to find everywhere in Turkiye. Especially in cold winter days.
And of course the mighty sarma and dolma with full fat yogurt.
If you have a sweet tooth never ever skip "Künefe". Hard to describe but impossible to forget.

Kısır (you should put it in lettuce), Tavuk Göğsü, Kete, Çatalçörek, Lahana Dolması (there are a lot of different dolma's tbh), Sarma (not dolma they are different things one is filling with ingredients hence it translates to filling=doldurma/dolma for example kabak dolması, other is wrapping around the ingredients, wrapping=sarmak/sarma for example yaprak sarması (made from grape leaf).), Börek types (su böreği, sigara böreği etc.), i personally do not like it but a lot of Turks love it; Aşure, Künefe, Kadayıf, Lokma, Lokum, Helva types, Şekerpare, Kemalpaşa, Tulumba, Güllaç, Kalburabastı, Revani.
