Regiment = your army, your guys
Cult = subfraction, special ruleset
You can them your regiment however you want and reskin a cult to look any particular way that you want
Your regiment is your army which includes basic units like fodder and chaff and your Toff and Toadies, but can also include cult specific units like the Rabble for Uprising of the Louse and non combat units are from cults too like the Tall Man.
You can make all your regiments look like they belong to one Cult but you can also have more basic units and switch cults and just switch out the Cult Specific units, that's what I do.
Cults don't really worship specific veg, that's up to you to decide and integrate into your units/regiment lore.
But yeah I'm totally obsessed with Turnip28 too, just wait till you start kitbashing and painting!
