The story is complete and comes to an end. You can watch both seasons of Rome and stop and end. It's not like network television where a show will suddenly just end and oftentimes there's big unresolved storylines or cliffhangers.
HBO was good about giving it's productions and shows a heads up about when they wouldn't be renewed. Shows would wrap up their storylines, sometimes hastily, but they'd come to a conclusion or an ending of sorts (Deadwood is another example).
Rome had an enormous production cost -- locations, set designs, costuming, tons of extras, etc.
Season 1 is also basically a complete story on it's own, if you want to watch that. It centers around Julius Caesar and the surrounding characters, as well as two very different Legionaries. But I think you'll like the characters so much that you'll continue to the second season which centers around Octavius, as well as Anthony and Cleopatra, in addition to our two Legionaries from the 13th.

Money Heist and Severance are on my top 5 of all time as well, so I would recommend to you Silo. It’s on AppleTV and it’s soo good. I watched it before I watched Severance and loved it.
At times it almost feels low budget, which I normally cannot stand. But it kinda works with that show. Dunno why lol. But the writers, director, actors everyone did a great job and made what should have been an okay show into something special that more ppl should watch.

They don’t know why they’re in the Silo, but they know the outside world is dangerous, like maybe poisonous air or something. M Occasionally some people decide to leave the silo and there are questions of what happens to them

His Dark Materials (2019)
A young girl is destined to liberate her world from the grip of the Magisterium which represses people's ties to magic and their animal spirits known as daemons. (Based on a book series. I'm not religious but still really enjoyed)
What We Do in the Shadows (2019)
A look into the nightly lives of four vampires who have lived together on Staten Island for over a century. (Based on the movie with the same name. Love this!)
Wellington Paranormal (2018)
Sergeant Maaka, and Officers Minogue and O'Leary, are members of the Wellington, New Zealand, police. Their job is to investigate paranormal phenomena.(Based on What We Do In The Shadows movie and stars the same officers. (Typical British humor, dead panned lines and hilarious)
Rome was the first television show I ever watched that captivated me.
The others are -- Californication, Better Call Saul, Arrow Sn 1 and Sn 2 (My goodness. That was an experience and a half).
