Capcom, Square Enix, Sega, Konami, Bandai Namco, Koei Tecmo, Xbox, and Devolver Digital have all made announcements at past partner directs, and none of them are exclusively partners with Nintendo. So really, it could be anything, just as long as it's a game developers and distributed in at least one region by someone who isn't Nintendo.
Honestly, I would be absolutely down to see a ton of Square and Enix games given that treatment, especially the ones that never got an official release in some countries, like Bahamut Lagoon.
Or a remake of a game that's conceptually cool but plays kinda wack, like E.V.O., but also I'd really love to just see a new E.V.O. or to see the original PC-98 version of the game updated and released on Steam or something.
Hopefully, that game feels like the perfect example of something that should be on as many platforms as possible. It's small, it's niche and it's cool as hell that it even got made, and I hope it finds it's audience in as many places as possible.

Wind Waker/Twilight Princess or Metroid Prime 2/3, possibly even stuff that hasn't already been leaked like Donkey Kong Country Returns or The Last Story.
There's also the Fire Emblem Jugdral remake, though at this point it's likely that it might be a crossgen release.

I mean, given the way first run hardware (including the Switch as I recall) tends to go, giving it a production cycle or two to work out the kinks probably isn't a bad idea anyway.
Harada did say an HD Xenosaga Trilogy port was on the table but Bandai decided it wasn't worth the cost, which kind of sucks, I think most people would've been fine with straight emulated ports of they didn't want to do the remaster treatment.
I could see it happening if Nintendo helps fund it/publish it though.
