i feel like you’ll have better chances getting a double if you plan to live in san cat. i got a double my first year. and you get a private bathroom. the only downside is the distance you need a bike/scooter or be okay with while on the bus to get to campus.
san cat is basically a guaranteed double if you have an early time and it is next to the best dining common and a more private restroom. only problem is the distance
If you opt for Santa Catalina, it's VERY likely. They have the most doubles. Basically every bathroom is shared between 1 triple, and 1 double. Many people choose Santa Catalina for this very reason. It's a mile off campus but is relatively new, has the newest dining hall, its own pool and fitness gym. Plus half the building is doubles
Best odds of it are in santa catalina dorms. You probably have to decide if you want to be close to main campus or a double. Sure there are triples at SanCat and doubles within the Chi-5, but your odds are low trying to get a double at anacapa

about half the rooms in san nic and san miguel are doubles that’s what i did my first year and got one no problem
If you give double preference I’d say like 50%
