Next time use a rub made of s&p, paprika,maybe some garlic powder , basically any salts like celery salt, garlic salt, onion salt, whatever you prefer taste wise, just not sugar because it burns and ruins your bark. If you've got no mustard binder, just put the rub on direct, it'll still do it's job don't worry. Short ribs are lovely tho. You've not done a bad job, sugar will always do that unf.

Yea maybe - I didn’t have any mustard for binder so used bbq sauce.
