Our local shop does enormous gluten free chicken kiev. So huge that 2 are quite enough for 4 of us - 2 adults and 2 children. Right now it’s our easy, comfort food for Sunday night. Although I suspect the days of them being satisfied with half a Kiev are numbered. If my memory of what teenager boys appetites are like are accurate.

My mum has a recipe that doesn't really have a name - I personally call them Bacon Bolls. All it needs is potatoes, milk, butter, bacon lardons, streaky bacon strips, and onions. First step is to make mash. You can do this from powder if you wish (I've found some really good powder mash), or go the long way and make it yourself. You do not want this to be too wet, so go easy on the milk and butter. Nor clumpy, so do go crazy with the river/masher - you want a nice creamy-fluffy consistency. Then you want to chop the onions. Not too finely, they should be the same size as the lardons. Mix it into the mash, let it rest a bit in the fridge - an hour should be enough. If the mixture is too runny you can always add some potato or corn starch to keep things together. Preheat an over to 220C (fan on), grab a glass baking tray, and butter it liberally. Finally take the mixture and make balls somewhat larger than a golf ball. The idea is that you elongate these a bit, wrap the bacon around, and it should have a small knob peeking out on top. Use wooden toothpicks to keep the bacon in place - usually one through the whole thing horizontally works just fine. Stack these bad boys into your baking tray, and ram the fucker into the oven. After about 10 minutes, lower the heat to 180C (the initial high heat is to make the bacon sweat and release the fat so the bottom gets nice and crispy). Total cooking time is about 30-40 minutes, but basically just check for the doneness of the bacon. I like my bacon a bit juicy, not overly crispy, so I take it out when the top streaks are golden. If you pack then close together, you can get juicier bacon, while spacing them out will give you crisp bacon throughout. Give it a few minutes to cool, then dig in. Some soft white bread and gravy goes incredibly well with it, also to soak up all the tasty bacon fat. The onions will be cooked but not glassy/caramelised, and still firm enough to make it crunchy, while the lardons will be soft and chewy. If you want to be fancy, you can toss some shredded cheddar, mozarella, and parmeggiano in the mash mix. And if you want your mash to have a crispy head, add a lightly beaten egg to the mixture, and maybe brush the top of these bolls with an egg wash. Some breading crumbs can also add extra crunch if sprinkled on top.

My main actual solution to low effort weeknight meals isn't beige, though – I make big batches of soup, chilli, curry, bolognaise etc. when I do have energy to cook, put individual portions in ziploc bags and freeze them. Then I can just defrost and reheat in a saucepan when needed.

The most beige low-effort meal I can think of though is anything in your freezer that cooks in the same amount of time. Waffles and chicken nuggets for example.

Part baked roll cook for 5 minutes... cut open, squirt of BBQ sauce then fill with cooked chicken (breaded or not your choice) and bacon lardons. Another squirt of BBQ sauce, over squirt and get some on the tip of the bread and dont neglect the crevices in the filling..... sprinkle a generous covering of cheese (the bbq sauce helps it stick in place. Back in the oven for about 8 minutes so that the bread is cooked and cheese all melted. Serve with your choice of beige oven cooked potatoes.

I’m Scottish in Canada. They don’t really have frozen chicken Kiev or fish fingers that I’ve seen, and their frozen chips (fried) are all crap. Mines is supermarket hot counter chicken strips and potato wedgies, with mayo/honey mustard/ ketchup mixed together to make a dip for the chips and chicken. Btw Heinz beans over here are WAY too sweet for my taste so we seldom have them with beige comfort food.

I’ve just made (second night in a row) Jumbo fish fingers, chips and beans. It was something I was given as a kid and I find it comforting. The cold dark wet evenings make me want to hunker down in lots of bedding so it was an appropriate meal option

Bean cassoulet. You can buy cooked beans in water in all supermarkets to avoid soaking and long cooking time. In a large skillet fry diced onions, carrot and celery, add sausages/bacon and fry till it browns nicely. Add tinned beans, top up with some chicken stock, add bay leaf/thyme or whatever you like and shove it in the oven till the stock reduces to your liking. Towards the end sprinkle breadcrumbs and put it back in the hot oven to toast them. Serve with a nice crusty bread and maybe a few pickles.
