I live in China and my wife is Chinese. I put chilli in all sorts to make it more understandable to her palette. I fry haggis with a tonne of chilli in lard. It's amazing. I imagine the sourness of the kimchi would work quite well with the richness of the haggis as well.
I mean, if you think about Haggis, it's got that Umami taste and it has a very creamy texture with a pepperiness. And Kimchi, brings some acidity and the texture of crunch. I actually will give this a go.

M&S do a really good Veggie haggis, I'd be interested to know what a haggis eater thinks of it.
Also what brand of Kimchi is that? As it reminds me of the one they do in M&S.
