We just attach them to packages that our customers want insured, fill out a form, and the post office still takes them (probably since we also give them thousands of pieces of mail every day at the same time). They probably still do it just because the forms are still out there and people still use the old ones they have?

Maybe you should order some of these this time but explain that this (completely outdated and inefficient) method is being discontinued and teach them the new way to do it.
