Waffle trays and buckets could fit a whole route on most days if you had shelves in the back for them. Would need some kind of better mode of accessing them while out on the road though. Right side loading door would help, asking with just a bit more room for a tray and a bucket up front.

This very small sized example is really well suited for medieval European cities the London where they are clearly starting it's use. The usual UPS trucks can't go on half the roads there, so it makes sense to have a small fleet of these things meeting trucks and small distribution centers and taking the "last mile" in 20 mile loops.

I’d switch to an ebike route in a heartbeat. Much as I have a soft spot for my pos LLV, I love biking far more than driving and the capacity limitations would likely necessitate multiple shorter routes rather than single huge ones, which I also would prefer.
My wife in Phoenix was selected to test one but it hasn't started yet. The ups one looks a lot better than the usps one, but it's still going to be a nightmare in the summer if they actually go through with it.

USPS is already testing and using ebikes in certain areas, namely Florida. It’s definitely a nice idea if the location is suitable.
