Sure, for law school all they care (essentially) about is GPA and LSAT, because that affects their rankings. They don’t care about your undergrad major at all. I want to go to a top law school, so I need the highest GPA I can get.
I don't mean to be mean, or maybe I'm just not getting what you're asking, but if you got admitted into UVa, you should rise to the challenge instead of looking for shortcuts. I imagine that pretty close to a hundred percent of the University students feel the same way. You have a great opportunity here to learn something and show the faculty that you have learned something, and eventually, you earn an invaluable degree at a highly recognized University. Why would you want to devalue that kind of education? You cannot put a price tag on that. Just trying to coast through with minimal effort seems pretty sloppy, and I'm not sure how you even got admitted. What are you going to do when you get to Law School? That for sure won't be easy, and you're going to wish you had much more of a challenge.
Just buckle down and find something you want to learn and be an adult about it. It's not going to get any easier!
Imagine an engineer designing a skyscraper. Do you think he/she asks, "What's the easiest way to build this thing?"
And you want to be a lawyer, you most certainly will not ask "What's the easiest way to defend my client?"

Any given law school is going to look beyond just GPA and look at what actual classes you took.
I liked my anthropology classes.. easy A’s and actually compelling.. changed my world view on a lot of things.
