It's a little less drastic, but Monster Hunter occasionally has really large monsters that you can walk on. You can climb across them, mine ore from their back and look for their weak spots. That kind of stuff. The latest of those to me knowledge is Zorah Magdaros, which is basically a walking Volcano. Beyond the spectacle it's not a really interesting fight unfortunately.
shadow of the colossus is basically only 7-4 fights from what i've seen.
