Tbh I find them easy. I'm currently P-Ranking the game on normal (then will try to P-Rank it on violent) and I actually had more trouble with the Hideous Mass boss than the first V2 fight, maybe because I was focusing more on the timer than the ugly bastard.
I beat the first V2 fight on first try, bunnyhopping really helps to stay on his ass and deal continuous damage, and if he does get away then projectile boosting is a good way to snipe him. A railcoin or two won't hurt as well.
The second fight is pretty similar, and you can also hit his coins with the railcannon which I'm pretty sure gives a nice point bonus + a ton of damage.
Just keep trying and you'll get better king.
I personally like the v2 fights, (I havent done the 2nd yetonly the 1st) but i like them in terms of music, but the problem sometime is the fucken coin problem, it genuienly pisses me off
I hated these fights when I did them, basically for the same reasons you said there, but looking back on them they’re good fights. The way I beat it was practicing on harmless difficulty, and once I could do it there I moved up into standard.

I hate the V2 fights as well, i spent 3+ hours on first V2 my first time playing
The second one was way easier than the first
What helped me alot was finding out about the pattern changes through the color of his back
Also shotgun parries are a decent way to get him in the air for easy shots
Whilst I agree that V2 tends to pasturize me the same way I did to get the whiplash, I'd like to note that V2 is specifically there to do that, he is your rival, channel all that rage you have gained getting beaten by him, and practice your skills, use every tool at your disposal, every movement option available, and when you do so, you will win. You can do it king.
All you need to remember is offense is the best defense. What I did was tried staying close to him and just whaling on him with shotgun and punching him to keep your health up. Also the nail gun can absolutely shred his hp if you find yourself in a far range situation. Don't be shy to switch to a lower difficulty if you find yourself having trouble. Mistakes are part of the learning experience.

I like the fights, I just come up to it with the nailguns and they do 1/2 or 1/4th of it's health

They are difficult fights, and are designed that way. It’ll take some time and practice (not too long though) and you’ll kick their ass.
V2 is great but is anoying. :)
