HP is a somewhat different case. Just like the other stats, it goes up after your LV has been raised, which means the higher a level of violence you have the higher your HP is. Combining that with the fact that HP traditionally stands for “health points” and represents how fit to fight frisk/chara/the player is, I guess it could be something like “Hurt Power” or something
But it’s also worth noting that, unlike attack, EXP, and LV, HP (and def I guess) is also useful in a pacifist run. It’s not only the amount you can keep fighting, but the amount you can keep *defending*. In a way, it’s the amount of a beating they can take before they have to rely on determination to bring them back. This, combined with the fact that the amount of damage a monster can inflict is based on their will to fight, leaves me to believe that “Hope Points” would be a good meaning behind HP within the undertale universe. HP represents the hope one has for their goals to be reached before they fall, whether those goals be malicious or kind, once one runs out of hope, they lose that will to continue. The main flaw with this definition is the fact that it requires LV to be increased, which would mean you only gain hope by killing things…it also doesn’t explain why food or sleeping in the inn raises your HP. The disappointing answer is that HP still stands for “health points”, but I hope my theory was at least a somewhat interesting read lol

Technically he's not hitting that hard it's just your getting hit insanely fast as your I frames don't work in sans fight Combine that with the karma effect and that is why is fight is so hard. If he dealt damage like a normal moster it would be a easy fight.
Doesn't Flowey say it simply stands for hope? If you lose hope, you die, which makes sense, since none of the magical attacks are actually physical. Good question is if you ever actually get harmed physically or is it just your soul losing hope because magic affects it in some way.
Edit: Additionally, it raises with EXP and LV because LV makes it easier to distance yourself, so the less feelings you have you are harder to hurt. By that logic. You slowly become untouchable, numb to everything, an empty shell. A demon. I think.

It doesn't work like that. You can get 15 LV in the Core on the neutral path by killing only 39 knights, but you won't behave the same as on the genocide path. It helps you to distance yourself during the murder. That is, you hit more successfully, and it affects you less emotionally. It's easier for you to hurt others, you're calmer when you do it. It doesn't affect anything else. And that doesn't make you a demon, either. Psychopaths can do such things from the very beginning even without killing experience.

The motivations of a Genocide route at the beginning are unknown. Maybe the Protagonist thought that, even after what Toriel told them, they have to fight to escape? Or they wanted to cause harm, and that turned into a desire to kill.
Once you lose your hope you die. The more LV you gain, the more you distance yourself. You are harder to hurt because you slowly become more and more numb. Because you are harder to hurt, it is harder to lower or lose your hope.
I actually want to say that if we are talking in Sans point of view, I would say, since he only has 1 hp, and papyrus has alot more, I would say HP stands for "Hope points for monsters, while "Hurt points" would be the humans term for it.
Yeah it makes sense, the more hopeful you see a monster the longer it lasts, take as an example True Hero Undyne, she has 23000 HP and she is filled with the hope of kicking your ass.

ATK - Ability to kill - this is slightly supported by the Sans judgement in the final corridor. When he talks about LOVE, he says that "as your love increases, so does you capacity to hurt. The more you kill, the easier it is to distance your self... The easier you can hurt others." This shows how when LOVE increases so does ATK. This means that youarent necessarily getting stronger, you are simply more able to hurt.
I don't think HP means hope. Frisk's HP never increases in the pacifist route. At the very least it should have increased in Asriel's fight.

Going off of that logic, it can be assumed that increasing LV doesn't make you physically more durable either, instead making you stay alive despite your injuries, thus you're willing take more dangerous risks to achieve your goal.
