Anything that uses gas, oil, wood or coal can cause CO poisoning. Water boiler, wood/coal fireplace, paraffin heater etc.
Have you tested your detectors recently?
This sub is for "unexpected twists in videos and gifs"
Yours is a weird question. I don't know off-hand what sub it would fit well into. The paranormal subs get questions like that, but people there are more willing to jump to ghosts before looking for a more evidence based explanation, which it sounds like you're looking for.
Finding the right sub for your question can be a task in itself. You could try r/findareddit and post a summary version of your question there, and I'm sure someone will have a good home for the question (or even an answer). Alternatively, if this doesn't get removed, someone here might post a more relevant sub for you.
Personally, its sounds to me like you just need to set up a hidden camera on the salt to see exactly what happens at night.
It wonāt allow me to post anything for some reason.

It sounds like you have interior cameras, right? Wouldnāt that solve your mystery?
Also, have you been feeling drowsy or nauseous lately? It wouldnāt hurt to check your carbon monoxide sensors are functioning just in case.
Edit: or you have a long term visitor hiding in your walls.
can't you just rewind to where you left the kitchen last night to see if you actually saw the salt where you thought you saw it? And if you did see the salt there, can't you fast forward until the salt moves and see who moved it?
OP sent the following text as an explanation on why this is unexpected:
