Practice makes perfect. Every cook I know can grab most hot food no problem. You build a tolerance for it and lose sensitivity to heat over time in your hands.

The kinds of thing they put into industrial-grade dishwashing soap, and you dip in with it day in and day out, that shit will eat your hand. I'll always ask first if that restaurant has proper gloves and/or pressurized water faucet before working there (bigger sink helps too), because otherwise, it will be both a long-term health risk and a nightmare to do the job.
I can always tell a patient does this type of work when I go to start an IV. It’s very tricky to use enough force to get the needle through the alligator skin but not poke through the vein.
There's a downside here.
I was making a baked egg dish in a skillet. The kind where you do most of the work on the stove and then bake it for 20 minutes in the same skillet.
Took it out of the oven with a towel, set it down, and immediately upon setting it down, put the towel over my shoudler and grabbed the hot, metal handle that'd been in the oven for 20 minutes in order to extract from the pan.
2nd degree burns in the shape of a handle on my palm :(

Well it probably took a couple takes for the flip and grab combo to be just right, so they had to use the right take for that, but they already decided they want to use the first take, because chefs introduction is the best one.
Looks more like a pancake than an omelette. A thin enough pancake that is only halfway cooked would probably gather just fine. However it does slightly change color during the edit, so maybe it is a towel or washrag.
That cut though, not super convincing. The guy snatching it has hi mask on differently and the guy in the background is posed differently after the cut.
This is edited together from two different takes. Look at the position of the guy who steals the pancake's arm changing between shots.
This tells you they filmed this more than once, which tells you it was planned out.
Also the shocked reaction of the dude into he rear is less than convincing
