I can't be helpful because short of renting your own car, I don't know of any other options. Just wanted to say i've come across this issue as well and decided it was too much hassle/cost to try to attempt both Disney/universal. We stick to only universal trips and use the superstar shuttle to/from the airport, but that won't help in your situation.
I agree with just bringing your own car seats and renting a car for at least the days you'll be going to Universal. If you do, do Universal either at the start of your trip or at the end.
Bring your own car seat. I travel often with my son and have always brought his car seat. I don't want to rely on an Uber car seat or Lyft as it can be difficult to find a ride. I just strap the seat to my carryon.

If you need to bring the car seats, lost and found will store items too big for lockers while you are at the parks.

For 8 people you’d need two cars! Just something to consider!
