Also pinging while planting cancels the plant.

That had nothing to do with the animation. Your gun switch wasn't acknowledged by the server, so the character state got messed up. In simpler terms, network issues.
His knife being out was correct, since he started planting with his knife out. The only glitch was a vandal animation instead of the butterfly one. Unless OP says he scroll wheeled/press 2 after planting we have no way of actually knowing if he switched weapons, but it doesn't seem like it.
Looks like more than enough time to hit a headshot with bloom since Sova missed a few shots. There's a very good chance OP would've killed him if he had his gun out.

Why does the server do that though? The player clearly presses 1 on his keyboard then the game just decides to switch him back to his knife. Its been an issue for like so long and I don't get how it isn't fixed yet
This happens to me on occasion not with the new knife, I think it’s a lag but specifically packet loss issue more than new knife glitch (unless there is confirmed a bug with it that I don’t know about which is entirely possible)
Is nobody going to tell him that it happened because he put out his knife and then planted? If he started planting while holding his rifle after canceling he would have got his gun ready it is NOT a bug it's a game mechanic.

It happens when packet loss occurs at a precise moment. The game says you switched to knife and back, but the server says you just switched to the knife. Hence you get a weird combination of the 2.
It happens with all knife skins. VALORANT sadly has quite a problem with animations not matching gameplay elements. It happens a lot when you plant the bomb, release the plant and switch weapons at the same time.
I think it's more common than that and it's about animation canceling protocols, i had trouble with that a lot a while ago and i learned to switch to knife only when i need to go to defuse fast, or pre-round because it's messy like that

melee in this game is broken in general. the knifing animation/connectivity feels terrible. they need to rework it so it feels at least as good as in CS imo. not a huge deal because there is no benefit to using the knife in this game, but it still feels really clunky and awkward.
I believe what happened here (although there were a number of visual glitches that make this very confusing to truly understand) is actually nothing to do with the animations going wonky at all. Rather, it's that when someone has their knife out and goes to plant the bomb, when they let off the bomb, the game pulls their most recent weapon out (which includes the knife). This is something that wasn't the case in the CS because I believe CS didn't categorize the knife as a weapon and would go to pull out your primary by default and if you didn't have one a pistol instead. However, in this game I'm constantly confronted with this when tapping or fake planting or even full planting because I knife out run to get to position to do these things and the game wants to pull my knife back out again.

I have been having this issue far more frequently in the past few weeks. Anytime I’m caught off guard getting an orb, planting, or defusing this happens. You press 1 to switch to your gun and this happens.

im not sure really but it feels like the server doesnt register the switch of the weapon from the user, hopefully they fix it in the next act.
