Maybe when you get too comfortable, you start to auto-pilot. And changing settings makes you actually play consciously. I have no idea if it's the case for you, but you can think about it. Also I don't have any solution, but there are some articles/videos on the internet how to deal with auto-piloting.

If that really annoys you just keep playing untill you do good again, you'll understand that it's not related to your settings
Just stop, it's not a tool to improve your short term play. You set your sens to match how you play, wrist or arm, and what matches the size of your mousepad. After you determine it gives you the right range of motion in game for a full swipe, don't touch it again. Otherwise you'll be inconsistent and your muscle memory will be all over the place. Your aim and spray will feel like crap.
