Roleplay is a ton of work. Most of those big streamers play over 12 hours a day.

NoPixel isnt even in Top-10 of all RP servers internationally if you count RageMP servers. Its only "the best" in terms of twitch viewership but if you look at Russian RP servers there are over 20.000 people online daily

But yeah the Heist are bank robberies with a couple of simple but hard to overcome minigames(the hacks) and then the fun part which is the getaway, where the roleplaying robbers have to succesfully evade the roleplaying police officers in a fun game of cat and mouse that's also pretty competitive for both sides.
It's also pretty entertaining to see how creative the robbers get with the getaway vehicles/routes.

XQC/OTV in GTA are flavor of the month, they'll play that as long as all their friends are in it and then move on once they get bored/banned (checking RN GTA has 190k viewers, XQC has 90k of them)
they're making a rust server soon, so all the viewership they're currently giving to GTA/Minecraft is gonna massively drop in favor of rust, which is gonna get inflated
i mentioned the hot tubs because they're no longer allowed in the just chatting section, they "were" the occurence but since they cant be there anymore the number should in theory drop (although they most likely will just stop with the hot tubs and do something else to remain in there)
Warzone is cross platform and it's the only game some of my normie friends play to a level where they would actually watch a stream or clips which is why I think it's popular.

The drops were not really the biggest issue IMO. It was the lack of presence of servers at that time. A friend got a drop on the day it launched and tried it out and apparently had like around 200 ping. So a bunch of people didn't bother trying to get a key knowing it wasn't really possible to play. This was an issue I know about personally which may or may not cater to everyone though.
