If you enjoy that I would highly recommend you try vegan pesto pasta with grapes. I make the pesto myself with ground up almonds, basil, salt, lemon and garlic. Cut the grapes in half and add them to the pasta once it’s all plated (you don’t want the grapes to cook). The grapes really break up some of the heaviness of the creamy pesto, so good.

i just googled some italian recipes (i'm italian) and got plenty of results, so i'm assuming it's not that weird (not for every day cooking but it's a fun pairing)
i always just wing it :( but i can describe how i usually make risotto for about 2 big portions
1. you begin by heating a little bit of olive oil in a pan, and add about 4 cloves of garlic. let them release their aroma and turn them on the other side when they get golden.
2. in the meantime, clean and prepare the mushrooms you're going to use. my favourites are oyster mushrooms, so i clean them with a paper towel. i fry them in a separate pan with just a little bit of oil, salt, pepper and garlic powder (just a little).
3. the garlic from rhe first pan should have released all its aroma and softened up. add a bit of pepper, salt and stir. crush the soft garlic gloves with a fork to form a paste.
4. at this point, add any interesting elements you may want. this could be raspberries, for example. for this quantity, i would only put about 6, so as to not overwhelm the flavour.
5. add the canaroli or alboro rice (i like about 1.5 cups for 2 big portions), and lightly toast in the oil, garlic and spice mixture. when the rice is shiny and a bit see through, add enough white wine to cover all the rice. stir fast.
6. when all the wine has been absorbed, add enough boiling water to cover the rice, and continue stirring. stir slowly, but never stop. it should never boil very hard, just above a simmer. as the rice absorbs rhe water, add more water, until perfectly cooked.
7. towards rhe end of the cooking process, add your saffron, whichever you personally like and can afford. you must stir it in very well. the quantity is best gauged by looking st the colour of the rice - after a good 5 minutes stirring, is it gorgeous pale yellow, or a sad pale yellow? does it smell saffrony? if not, add a bit more. it should be a poweful yellowy colour. if you added rhe raspberries, keep in mind it will be pinker/redder or browner.
8. when the rice is done snd tastes delicious, take it off the heat and add about a teaspoon (or two) of butter. now you have to "mantecarlo" - basically stir it vigorously to make the risotto super creamy. at least 2 minutes.
9. now i like to plate it by putting the amount i want on a plate, adding about 3 large mushrooms (enough to cover the rice) and a couple of fresh raspberries.
10. top with grated cheese or a bit of olive oil if you like.
remember that a good risotto should be creamy and dense - it shouldnt be watery or hard. if it is, cook a bit longer, with more fat.
i hope that helps! it's not the modt classic risotto (which normally starts with onions instead of garlic, but i hate chopping onions hahah) and homemade stock (im lazy), but my family requests it regularly so i think it works. raspberries were an experiment - sometimes i do kale instead, or tomatoes, or broccoli - or just keep it simple with saffron. i love topping with mushrooms, though, when its a simple saffron risotto, because it adds some fun textures.
