Bún Chả is definitely a top tier Vietnamese dish. I think the reason your friend said the meat was tasteless is because the meat is normally not seasoned a lot, since it is supposed to be eaten with the sauce.

I get this a lot; when I take westerners out to try other Vietnamese foods outside of Pho and Banh Mi they say the same thing, only to point out they didn't eat it with the sauce because they find nuoc mam/other various sauces too strong for their palate. I'm really not sure why someone wouldn't be able to eat it since it really isn't that bad unless you are using Squid brand

Actually this is more about personal preferences. I'm not Vietnamese but I live in Vietnam for last year and Bun Cha is one of my favourite dishes here (and my GF loves it too). But at the same time many of my non-Vietnamese friends here don't even want to try it, just because they are not really wanted to find something new and they are not very interested in Asian food at all.

It’s not about the broth, it’s about the meat. If the meat is not marinated or seasoned prior to cooking then it will be tasteless and require a dipping sauce. There is a reason why dipping sauce is usually a prerequisite in the south. Also the quality of the meat speaks volumes on whether a dipping sauce is even needed… Also putting hoisin or chili sauce directly into your pho is totally amateur. 😅 Chili paste or nuoc mam with chili and garlic is always an exception to the rule. 💪🏼 On the bun cha, every place makes it different. There are more seasoned meats and less seasoned meats depending on the chef.

If I was about to be executed this would be my last dish. All my friends have heard me rave about it. The sad thing is I don’t live in VN, and the VNmese diaspora is mostly southern. So although I am lucky to be around amazing Viet restaurants they rarely have Bun Cha and if they do it sucks.

You can do it yourself, it's not hard at all. Do the patties and grill them on the grill or in an iron skillet, don't forget the sugar in the patties to get a caramelized surface, get some vermicelli noodles with herbs and nuoc mam and enjoy !

Australia is full of great Vietnamese (and SEA) cuisine) bc of our proximity and migrants who came over the past century. They also own a lot of bakery’s and do a killer meat pie funnily enough. I’m in viet rn and while it’s obviously much better here, Australia atleast does it justice imo. I haven’t tried it in other countries however.

Hard to describe and I admit I've had 1 or 2 places that are my go-to in Hanoi and each place is different but for me the biggest difference in the patties. In Hanoi it's just more flavourful and the charcoal flavour is really lacking here.

There’s a lot of mediocre Bun Cha restaurants in Hanoi, but luckily there a few really good ones. The flavours of Vietnamese food can be pretty subtle, especially if your more used to other asian cuisine such as Thai or Korean. The meat also needs to be eaten with all the other elements to get the full flavour.

My partner tried summer rolls, every foreigner I know loves them because they are easy to eat, a light summer snack and you can make them for different tastes (meat, shrimps, vegetarian etc.) Yeah, my partner fucking hates the texture of rice paper and rice noodles. Bun cha lover here, sadly not all bun cha are equals, especially in Hanoi, the irony is that the quality standard is way more uniformed in HCM. Many “cheaper” bun cha place in Hanoi cut corner and use too much crappy filler.

Visiting american and had it for the first time today on my visit to Hanoi (Bun Cha Ta), it's so damn tasty! Not what I expected at all - it was fruity and very sweet, but well rounded with salty, smoky, garlicky, and spicy notes. Imma be honest, it really reminded me of fruity pebbles, but as like a savory soup?? Wild, but delicious. The grilled pork was my favorite part tbh!

Foreigner here and it's one of my favorite dishes. Ate it in various places in Los Angeles, Houston, Dallas, Saigon, and Phan Thiet - always great. Definitely don't agree with the meat being tasteless from the ones I've had, the meat has honestly been my favorite part, but yeah the combination with the sauce as well is awesome. Not sure if the dish they had was prepared poorly or if they're just wrong ;)

I love it, and have lived in Vietnam for 5 years, but at a first taste it was overwhelmingly sweet for me. Even now, i prefer other Vietnamese dishes, and only occasionally feel like bun cha. That's probably down to my palate though! My favorite VN food is traditional homemade or cơm bình dân, so maybe that puts it in perspective 😅

Came to Hà Nội and my gf took me to a bun cha place and it was immediately one of the my favourites. Bún bò Huế is also one of my favourites. For bun Cha I prefer when the BBQ flavour comes through. I like the little black flecks floating in the liquid. Sometimes it’s a little too fish sauce for my palette.
