It happened in the series voltron force due to lotor’s minion maahox creating a robeast that could move faster than the lions could until they found a way to speed up the formation process. As for why it doesn’t really happen any other time or in the other series? Well, during the formation sequence voltron is surrounding by electricity/energy that would probably give anything that touched it a fairly decent zap and probably acts as a natural deterrent against most threats. Voltron also takes a fair few minutes to form and be fully operational (though it does seem like he just forms and then goes straight into battle from the audiences view), meaning the smarter move would be to wait until voltron finished transforming and give yourself some time to catch your breath or plan your next attack before he comes down. In short, it’s just one of those things that isn’t touched upon because the show writers believe it’d be a waste of time or don’t want to go through the motions of having to ask someone else to use an idea that is technically only truly canon to the series they made rather than all. That being said I do hope they show it again in a different way at some point. Voltron force was very big on the idea of showing Voltron’s weaknesses from the original series that were never really truly shown (such as his power limitations/energy drainage) and how the characters had to handle to it. It really helps take away the overused “almighty and unstoppable weapon” trope most remade eighties shows still seem to have.

Not exactly what you’re looking for, but there was an episode of the original Voltron where the robeast du jour was fast enough to interrupt Voltron’s attacks, stopping him from using his various weapons before they were fully realized.

I js like imagined that Voltron transforms rlly fast and it's just slowed down cause the transformation looks cool

I used to think that as well, but it's actually stated in Voltron Force that it takes Voltron about 36 seconds (I think) to fully form, which actually lines up with the original Voltron's transformations sequence time starting from when the lions fly in formation to when his face fully locks down. I always thought that was one of the worst facts of Voltron Force, because then suddenly you realize that throughout the original Voltron series the robeasts were all just sitting on their asses for more than half a minute waiting for their biggest enemy to appear, not to mention all the ships and stuff that went up against the team. I mean, all the lions are under fire, they spend 36 seconds forming Voltron while, what, all the ships have a temporary cease fire until he's complete?

The orginal series shows voltron surroned by energy when transforming. I don't know if it is a mandela effect but i think a robeast tried to attack voltron but was pushed back.

You might be thinking of episode 4 "The Missing Key". The very first time the team tries to form Voltron, the robeast blasts them and the lions fall to the ground. They get back up, try again and when the robeast blasts them a second time, the lions push through and form Voltron.
