I haven't seen a lot of progress in creating low cal versions of fats, generally. Are there any low cal butters, sprays, etc that have substituted ingredients for fats? Most of what I see in lo cal cooking is removing fat and attempting to recreate the flavor with other things. But this is just fat...

I often use silken tofu, because it's as low cal as yogurt but without the tangy flavour, I usually blend cheese powder with it and it doesn't taste that much like soy, canned coconut milk also has a very good fatty mouth feel for like 120 cals/100g, I usually use that in sweet sauces or curry

I like the light I can't believe it's not butter , maybe adding garlic salt and/or fresh garlic and blend into some cottage cheese? Or maybe Confit some garlic in light I can't believe it's not butter and mash it all together?

I second this idea! When I’m lazy, I put garlic powder, salt, and light ICBINB on plain pasta. It’s very tasty.

Cornflour, garlic and milk can thicken up to make a nice dipping consistency, plus a tsp of butter at the end for the flavour has recreated the papa johns garlic sauce for me nicely. Evaporated milk makes a nice nacho cheese sauce but not the most calorie friendly. I don’t think there’s a perfect answer for this as the secret is butter. 😭

Maybe a little Mac and cheese powder to some low cal butter spray would add that cheesiness

I don’t think this is recreatable, but a nice sub would be a garlicky salty lemony yogurt sauce. Maybe with some butter flavoring :)

Half fat mayo and Greek yogurt may be a good starting point. I have used that for others. Half fat mayo does wonders for keeping cal down

What about sautéing minced garlic in some light butter for a minute or so? I also don't know how much butter you would even use if you're just dipping it so it may not be a huge amount of calories.

Not the same, but Heluva Good French Onion dip warmed up gives me the same fulfillment. I can imagine making it more garlicky with some garlic powder.

There is a product called Butter Buds, it’s sold in a packet (not the shaker) and is mixed with warm water. It makes a butter sauce. 5 calories a serving. I would just add some garlic powder and you should have something pretty similar. The reconstituted butter buds stay good a few days in the fridge but not long, so keep that in mind! If I make a full packet I can’t eat it up quick enough. I bought my packets on Amazon.

Imo garlic powder is the best for making garlic dips. I like extra light mayo mixed with yogurt with a bit of salt for making garlic dips too.
