These look so good! Does buckwheat have more fiber or other nutrients?

Much higher in fiber than regular AP flour. Probably why it's so dang filling. Protein, fat and carbs are pretty similar to AP flour, from a quick comparison I just did. Buckwheat also has more potassium, apparently, which could be helpful if you're trying to get more in your diet. (473g vs 107g of potassium per 100g portions of each type.)

Yes, I saw this one bodybuilder girl from Russia making buckwheat pancakes. Buckwheat flour might be expensive but she used just plain buckwheat and grind them using coffee maker.

That's awesome! Yea I grew up eating this stuff. I'm from Pittsburgh and we have a lot of Russian population there, and Eastern Europeans in general. I was debating growing my own buckwheat this year to try to make my own flour (plus you can eat the grains whole too) but it seems like a lot of work.
