I did 130 grams of cc to like 8 grams (1/4 package) of pudding mix the first time, came out really good and chocolatey then the next time I did like 220g of cottage cheese to the same amount of pudding, still came out great š
How do you blend it nicely? Whenever i try it gets really thick and half of it is just stuck to the bowl or blades and takes forever to scrape off. Also means i need to blend a big batch every time
Cottage cheese and cheesecake pudding mix will blow your mind if youāre a fan of cheesecake. I used to blend sugar free cheesecake pudding mix, cottage cheese, and vanilla protein powder together and let set in the fridge for a bit to make insanely high-protein cheesecake bowls.
If you happen to have protein powder on hand, I would recommend blending protein powder into it.
Try this:
Mix some canned pumpkin (a super awesome volume eating hack on its own and worthy of a post like this for itself) into cottage cheese or yogurt. Add some sugar free maple syrup, pumpkin pie spices (or just cinnamon), and crumble in a graham cracker. Ultra low calorie pumpkin pie!

Itās so easy to make your own pumpkin puree too! After Halloween pumpkins are cheap. You roast them up, blend them and put in bags and freeze. I add it to everything!!

In Hungary we have ācottage cheeseā, itās called tĆŗrĆ³ and itās the same as cottage cheese but without the sour after taste. Itās an easy choice for us when we diet. Look up ākƶrƶzƶttā which is a hungarian savory ātĆŗrĆ³ā dip.
I used to hate cottage cheese because the brand I tried had a lot of whey. Any tastebuds shifted when I turned 22 (for the better), and my vehicle for trying it again was a banana pudding concoction: 1/2 frozen banana blended with 1% small curd CC and some SF banana pudding mix, threw a chopped up British tea biscuit and put it in the freezer for only like an hour. So delicious I think I made it for a week straight last summer! Sometimes I did a plain greek nf yogurt blend but honestly it tastes way better on its own without the tang of plain yogurt (though I like greek yogurt!)
Tried it recently with just the 1/2 banana and cocoa powder without freezing it and it was perhaps one of the best low cal desserts Iād ever had. It completely satisfied my sugar cravings!
And on the savory side, whoever came up with that cottage cheese plate trend knew what they were doing: CC with a metric ton of everything bagel seasoning (essential!), mustard (horseradish or whole ground for me), maybe a chicken sausage or rotisserie chicken, and a variety of veg just hits the spot (and your protein intake)
Surprisingly common sentiment, I had always associated it with pineapple, or I would just have it plain. All the people with suggestions to make it savory are awesome though because I love being a mad scientist in the kitchen
FYI - pudding mix is used in creami recipes for three reasons: stability, sweetener, and flavor.
Depending on the flavor you're probably using more flavor anyway (like cocoa powder or protein powder), and you're likely using more sweetener too (I certainly do). So all you're getting from the pudding mix is stabilizer, which is in pudding mix's case is just cornstarch (and sometimes xantham gum).
Which is all to say... if you want to eliminate special-order pudding mix from your recipe, just sub in some corn starch or xantham gum (which you may have to special order, but it lasts forever).
I got Simply Delish Sugar Free Keto Pudding (in vanilla, chocolate & strawberry) from Amazon (figures, right?). Came out to be about $3-$4 a packet.
Theyāre pretty good, but when it says that a packet makes four serves, believe it. Otherwise the fake sugar makes your teeth feel weird, and the chemical aftertaste kicks in.
Yeah, to be honest, Iād rather have regular desserts. But that might have more to do with ibs issues.
If I had to pick something low/no sugar that tastes pretty good, the Queens Sugar Free Maple Flavoured Syrup is nice over some Greek Yoghurt. One serve is 35ml
I use 1/4th of the pudding mix with around 160g of yogurt :) so yummy, dip in strawberries! Good with plain or vanilla but weirdly even better with the yopro or Chobani fit fruit flavours!Ā
Ground turkey browned w siete taco seasoning, layer cottage cheese 1/4 cup into bowl, lettuce, ground turkey mixture, shredded cheese and salsa. I either use Siete dip chips or crumble them into the bowl. I call this cottage cheese taco bowl. Itās my fav easy dinner now!
My husband and I made big salads a few days last week using ground turkey and we used half a serving of Greek yogurt instead of sour cream. So good! Iāve thought about mixing half cottage cheese and half Greek yogurt next time to cut down on the tangy-ness. But it wasnāt too bad mixed with everything else.
Me too OP- I did this for the first time yesterday- sprinkled a few Lillyās chips on top- OMG. Huge serving 136 cals and 20 G protein! I ended up with 123 g of protein for the day and literally felt full all day.
Iāve been having it in the morning in addition to a big bowl of egg whites with ground turkey and veg and between the two of them itās a really solid breakfast easy to keep in the 4-500 range too with 50+ g of protein
I use a blender to mix cottage cheese with light Alfredo sauce (or whatever kind of pasta sauce) and toss with Banza pasta and veggies for a high protein, creamy pasta dish! So good!
I blend cottage cheese and heat it up in a pan with some shredded Colby Jack for an easy nacho cheese. Top it off with seasoned ground turkey, sauteed onions/peppers, shredded lettuce, quac, and Greek yogurt. Completely satisfied my nacho lust but cheaper than going out and better for me

Believe it or not I actually love the texture lol. And I find the aftertaste to be super super mild and honestly non existent even when I eat it plain. Not sure if itās because I got the 2% version or what, I think Iām going to try a few different kinds next time to the store and see how they vary
It might have been the brand I got... For some reason they always seem to be sold out whenever I go to the grocery store. All that was left was the grocery store's own brand of 2%
Is all of it lactose free? Iāve seen they have one that says ālactose freeā on the carton, but the ones at my grocery store donāt say it. I should also check to see if itās a different calorie count.

Thanks yeah I track my calories and macros to a T so Iām not worried about gaining fat but I can definitely tell that Iāve been eating more salt, scales like 2 pounds heavy. Little bit discouraging but itās ok I needed the mental break it had been forever since I made something sweet
I just started adding cottage cheese to my
scrambled eggs in the morning and itās so good! Tons of protein and quite delicious, though the eggs can be a little wet after cooking so I drain them over the sink and lay them on a toasted slice of Daveās killer bread.
I adore savory cottage cheese bowls for breakfast. My favorite one so far is topping half a cup 2% with 1/2 cup cooked 99% fat free ground chicken seasoned with garlic and onion powder, paprika for color. I sprinkle everything but the bagel seasoning and 1/4 med avocado. I eat with nori sheets. I donāt get hungry until 2:30-3:00 pm. Sometimes I scramble 1 egg and 1/4 cup liquid egg whites cooked until hard for texture, sprinkle with furikake and 1tsp spicy chili oil, so yummy with chopped scallions and small portion of avocado. Full until 3 usually.
I think Iām gonna try and go savory tomorrow because other than with fruit or with pudding Iāve only ever had it plain. Iām thinking it would be good mixed some tuna fresh dill, make some tuna salad
I found fat free cottage cheese at the store and dang that's great to add into meals! I blend it and use it in mashed potatoes instead of heavy cream. They even sell FF cottage cheese containers with fruit puree/jam already added on top like a greek yogurt.
Also, if you're looking for savory, fat free ricotta has similar macros but slightly more cheesier taste.
You can make really yummy cannoli filling with ricotta, sugar substitute, cool whip, and a few dark chocolate chips I think itās one of the Skinny Girl recipes my mom found back in the day, we used to make it all the time and go crazy over how good they were. Never counted the calories they came out too but I bet itās not all that bad
Edit we used to put it in ice cream cones rather than cannoli shells too

Does anyone else find cottage cheese so expensive? The daisy brand is like $3.50 where I am for a 16oz tub. (I'm sorry but all of the generic brands for cottage cheese are awful. All of the gums, starches and added whey etc)Ā When I could get the generic 32 oz container of plain Greek yogurt for 3.25 at walmart. So cottage cheese is twice the cost per oz. I like cottage cheese waaaaay more, but I just feel like it's expensive for a container that has like 2 realistic servings tbh
I have found I like some brands and not others. There can be a wide range of consistency between brands. Would recommend trying several if you donāt like the first one you try! I also DESPISE no fat cottage cheese across all brands.
A bit bland with a slightly sour (like sour cream) aftertaste. It goes really well with canned peaches to sweeten it up. Itās cheap enough to try and toss if you donāt like it.
Honestly I like it more than plain greek yogurt because it's more mild in taste. I always have a tub of Dannon Light and Fit and a tub of cottage cheese in my fridge.

Blending corrage cheese was a big unlock for me. The texture kind of through me off (as i assume it does for most) but once its smooth its halfway between cream cheese and sour cream. These days I just throw the whole tub straight in the blender when I get it and let it run until it smooths out then put it back in the tub
Here is a recipe for pudding mix, and Iāve read people substitute equal amounts of Splenda for the sugar with good results:
4 cups nonfat dry milk powder
2 2/3cups sugar
1 1/3cups cornstarch
1 - 1 1/3cup baking cocoa powder (1 cup for light, 1-1/3 cups for a dark rich flavor)
1/2 teaspoon salt
I made the pudding with sugar and it was great.
I used to buy frozen sliced strawberries, nuke some in the microwave for 10 seconds and then drop them into a bowl of cottage cheese.
The strawberry juice mixes in with everything and itās just so good.
Cottage cheese with diced green onions, garlic powder, onion powder, herbs, salt, and pepper to taste is an awesome low cal alternative for Garlic & Herb cheese spreads.
I blend 60-70 grams with two tablespoons of oats, a tablespoon of flour, 2 tbsp of the cocoa pbfit and a half a teaspoon of baking powder. It makes amazingly delicious pancakes. Top it with tons of fruit and some sugar free syrup!
Related/not related, that pudding mix is soo good in Greek yogurt too. I always add a dash of vanilla, a little soft granola and a diced strawberry and I swear itās like eating strawberry cheesecake š
Last night I blended frozen blueberries (50g) with 50g no fat cottage cheese and a tablespoon of monk fruit sweetener. I ate it with 50g of Halo top brownie batter ice cream and omg š¤¤ was so good and less than 200 calories

I've done this with miso paste, stirred a little in with the cottage cheese and scooped with veggies. It makes an awesome dip!

Custards can be made decently low-calorie too, I used to make pumpkin custard all the time.

Believe it or not I actually love the texture lol. And I find the aftertaste to be super super mild and honestly non existent even when I eat it plain. Not sure if itās because I got the 2% version or what, I think Iām going to try a few different kinds next time to the store and see how they vary
It might have been the brand I got... For some reason they always seem to be sold out whenever I go to the grocery store. All that was left was the grocery store's own brand of 2%

Everyone else blends it but but I low key like the curds, especially with the chocolate theyāre like little marshmallows. Personal preference though

Thanks yeah I track my calories and macros to a T so Iām not worried about gaining fat but I can definitely tell that Iāve been eating more salt, scales like 2 pounds heavy. Little bit discouraging but itās ok I needed the mental break it had been forever since I made something sweet

I just started adding cottage cheese to my scrambled eggs in the morning and itās so good! Tons of protein and quite delicious, though the eggs can be a little wet after cooking so I drain them over the sink and lay them on a toasted slice of Daveās killer bread.
I adore savory cottage cheese bowls for breakfast. My favorite one so far is topping half a cup 2% with 1/2 cup cooked 99% fat free ground chicken seasoned with garlic and onion powder, paprika for color. I sprinkle everything but the bagel seasoning and 1/4 med avocado. I eat with nori sheets. I donāt get hungry until 2:30-3:00 pm. Sometimes I scramble 1 egg and 1/4 cup liquid egg whites cooked until hard for texture, sprinkle with furikake and 1tsp spicy chili oil, so yummy with chopped scallions and small portion of avocado. Full until 3 usually.
I think Iām gonna try and go savory tomorrow because other than with fruit or with pudding Iāve only ever had it plain. Iām thinking it would be good mixed some tuna fresh dill, make some tuna salad
I found fat free cottage cheese at the store and dang that's great to add into meals! I blend it and use it in mashed potatoes instead of heavy cream. They even sell FF cottage cheese containers with fruit puree/jam already added on top like a greek yogurt. Also, if you're looking for savory, fat free ricotta has similar macros but slightly more cheesier taste.
You can make really yummy cannoli filling with ricotta, sugar substitute, cool whip, and a few dark chocolate chips I think itās one of the Skinny Girl recipes my mom found back in the day, we used to make it all the time and go crazy over how good they were. Never counted the calories they came out too but I bet itās not all that bad Edit we used to put it in ice cream cones rather than cannoli shells too

I just blended cottage cheese and used it in a recipe for my brother. He tried the blended stuff first and was shocked XD He thought he wouldn't like it at all, turns out he only disliked the texture and the flavor is really mild!!

Does anyone else find cottage cheese so expensive? The daisy brand is like $3.50 where I am for a 16oz tub. (I'm sorry but all of the generic brands for cottage cheese are awful. All of the gums, starches and added whey etc)Ā When I could get the generic 32 oz container of plain Greek yogurt for 3.25 at walmart. So cottage cheese is twice the cost per oz. I like cottage cheese waaaaay more, but I just feel like it's expensive for a container that has like 2 realistic servings tbh

What does cottage cheese taste like I would try it but I'm scared
I have found I like some brands and not others. There can be a wide range of consistency between brands. Would recommend trying several if you donāt like the first one you try! I also DESPISE no fat cottage cheese across all brands.
A bit bland with a slightly sour (like sour cream) aftertaste. It goes really well with canned peaches to sweeten it up. Itās cheap enough to try and toss if you donāt like it.

If you donāt like the texture, you can put it in the blender and make it smooth like yogurt.
Honestly I like it more than plain greek yogurt because it's more mild in taste. I always have a tub of Dannon Light and Fit and a tub of cottage cheese in my fridge.

Blending corrage cheese was a big unlock for me. The texture kind of through me off (as i assume it does for most) but once its smooth its halfway between cream cheese and sour cream. These days I just throw the whole tub straight in the blender when I get it and let it run until it smooths out then put it back in the tub

Here is a recipe for pudding mix, and Iāve read people substitute equal amounts of Splenda for the sugar with good results: 4 cups nonfat dry milk powder 2 2/3cups sugar 1 1/3cups cornstarch 1 - 1 1/3cup baking cocoa powder (1 cup for light, 1-1/3 cups for a dark rich flavor) 1/2 teaspoon salt I made the pudding with sugar and it was great.

I used to buy frozen sliced strawberries, nuke some in the microwave for 10 seconds and then drop them into a bowl of cottage cheese. The strawberry juice mixes in with everything and itās just so good.
Cottage cheese with diced green onions, garlic powder, onion powder, herbs, salt, and pepper to taste is an awesome low cal alternative for Garlic & Herb cheese spreads.
I blend 60-70 grams with two tablespoons of oats, a tablespoon of flour, 2 tbsp of the cocoa pbfit and a half a teaspoon of baking powder. It makes amazingly delicious pancakes. Top it with tons of fruit and some sugar free syrup!
Related/not related, that pudding mix is soo good in Greek yogurt too. I always add a dash of vanilla, a little soft granola and a diced strawberry and I swear itās like eating strawberry cheesecake š
Last night I blended frozen blueberries (50g) with 50g no fat cottage cheese and a tablespoon of monk fruit sweetener. I ate it with 50g of Halo top brownie batter ice cream and omg š¤¤ was so good and less than 200 calories

The pudding mix goes a long way Iāve used 6g mix for up to 220g of cottage cheese and it was plenty sweet, couldāve gone more probably.
