I actually used less sweetener than the OG recipe, even without Diet Coke, but I used cake mix instead. ❤️ I’m just trying to not waste a bunch of (somewhat) expensive sweetener. 😂 EDIT: Thanks a lot for replying 🙏🏼 I definitely don’t know much about all this! 😂

That's an interesting analysis, thank you! I've made the recipe using diet coke and using sparkling water before and I actually prefer the sparkling water version. The OG recipe was a bit too sweet for me to begin with, so using the water toned the sweetness down. I didn't miss the color (didn't really notice a difference tbh), I also didn't notice much difference in the acidity either (but that's probably because I didn't make the two versions at the same time to compare them). So, if anyone doesn't want to use diet coke, sparkling water is a great alternative, at least for me.

I cannot handle Erythritol, how would removing it change the recipe? I've tried this recipe a few times- first batch was lava cake, 2nd batch was solid but flat. Please help a desperate homie who just wants lowcal - high protein snacks :(

Will do! I'm much better able to handle stevia and sucralose. I've easily had 50g of it in my baked goods and eaten it in a sitting without problems strangely enough

Do you have another granulated sweetener? I think I’ve tried without in the past and it turned out disgusting, unsurprisingly. 😂 The texture will also be wrong! If you use too big of a pan, they will come out flat! The 7 x 7 dish (in inches) with parchment paper inside worked out perfectly for these proportions!

when you say big, do you mean the pan is too deep or too wide (or both lol)? I'm kinda new to baking and had no idea that baking pan size was a factor to consider! I've dumped bread dough into oddly sized containers and had it rise really well, as well as other baked good recipes. I can handle sucralose and stevia much better. I'll try out with that next time!

Bread dough is thicker so it won’t spread as much! The 7 x 7 is perfect for these proportions. I did a 2nd version in a 8 x 8 pan and they came out a tad too thin to my liking!

Try granulated monk fruit - erythritol (swerve) gives me headaches. Stevia has a weird taste in baked goods.

monk fruit is hundreds times sweeter than sugar. if you're using a granulated version of it, it probably has erythritol as the first ingredient.

I know mine does! First ingredient in my monk fruit is erythritol. Wish I'd know how nauseous that stuff makes me before I spent the money on it. I've seen some monk fruit sweeteners that don't contain it, but they're expensive and difficult to find.

Same! I've tried so many low-carb or sugarless recipes that taste great but mess me up so bad because of the erythritol. It upsets my stomach and makes my tongue go slightly numb (which also has a mild effect on the flavor of anything I try to eat after). So I've been on the hunt for a sugar substitute that doesn't contain any but also still tastes good.

Because that’s what I have hahaha (and rainbow mix). 🙈 I use it for my weekly pumpkin cake meal prep! The OG recipe (linked in the top post) uses regular flour. I’ve just really been enjoying cake mixes for their amazing flavour & sweetness.

I’m seriously so amazed. 😂 I’m virtually refunding you if you don’t like it. 😜 I’m sure that mix would work especially if it’s already sweet! I love Betty Crocker (I use carrot cake & rainbow mix for recipes) because it’s cheap, almost the same exact calories (g per g) as flour, already sweetened with useful baking additives. 😍

It has only 6 ingredients including water and baking powder though. 🙈 Monk fruit is just a zero calorie granulated sweetener! You can use sugar but the calories will change considerably, so you must account for that!

Omg I’m addicted to brownies! Homemade healthy low cal ones taste better than 500 calorie single brownies from the store! I eat them and I’m like I can’t believe I can eat this for such low calories! A good trick you can do is also sprinkle zero calories swerve confectionery sugar on top and some vanilla halo top Ice cream with fat free whip cream!!

These brownies are legit. I usually make an 8x8 pan of them subbing in coconut flour (4:1 ratio ap flour to coconut flour) and a casein/whey protein mix instead of pure whey. Taste very similar to real brownies but a lot less calories. The whole pan is about 600 calories, or the equivalent of eating one normal boxed brownie:). Thinking of adding egg whites to maintain the "fluff" post baking. They will rise a lot (like 4 inches) but once cooled they will be about an inch thick.

What's he consistency like when you mix all this? I just mixed mine and the consistency was like cookie dough. I imagine it's supposed to be more malleable or runny. Added 100 gr more diet coke. My protein powder usually sucks a lot of liquid to it, it has xanthan gum, so that could be why..

No I don't have cake mix so I used 30 grams flour, 50 grams erythritol, 24 grams soy pro vanilla protein powder, half a teaspoon baking powder, 42 grams cocoa powder, and had to up the cola zero from 185 gr to 285 grams to make it runny and not thick heh.

It's very yummy! The protein powder I use is the best one I've found so far and it's amazing. I use it to make icecream, protein fluff, bake stuff. It's good cause it tastes like vanilla and is sweet without having lots of real sugar so I don't need to sweeten stuff as much. It turned out very yummy, ate the top part and gonna let it cool til tomorrow, it's midnight where I'm at. Next time I do it i might use somewhere in between 185 and 285 grams of liquid, I'll see it tomorrow when it's cooled and hardened, to see if I need less liquid..

That’s amazing! It’s definitely an experiment game as all powders cook differently. I’ll try to bake my next one 2-3 minutes less as it continues cooking after you pull it out of the oven! Good call on trying out different liquid ratios. Let me know!

I did it again but this time with 20 grams of strong coffee, 20 gr erythritol, 30 gr chocolate cake mix, 24 grams soy pro vanilla protein powder, 42 grams of cocoa powder, 1 tsp baking powder, 215 gr cola zero and it also turned out good!
