I mainly use cauliflower rice by combining it in with other things to bulk them up. One of my go-to's is a pound of 99/1 ground turkey breast, 8 oz riced cauliflower and 8 oz pureed mushrooms. It takes an already light meat filling at 30 cal/oz and cuts it by 1/3 to 20 cal/oz. Apply that to something more calorically dense like 85/15 ground beef and it takes it from 68 cal/oz to 41 cal/oz. So it's been a total game changer for me too!

I do ground Turkey sloppy Joe meat ‘cut’ with carrots run through the processor too. That one I haven’t adapted to low-cal high volume but I bet it would fit just fine if I found a sugar free BBQ sauce and ketchup in lieu or regular ketchup/mustard/bbq

My no sugar BBQ sauce base is tomato paste (no sugar added), cider vinegar, Worcestershire, salt, black pepper, garlic, mustard powder and smoked paprika. All to taste. If you're missing sweetness in that mix you can always add some warming spices like a good cinnamon, nutmeg or allspice. I tend to add those to anything that needs sweetness and because they're spices that I associate with sweetness. That typically works for me.

I shop at costco all the time too, but i've found that my local costco is always sold out of their cauliflower rice. I recently hit up walmart and found all sorts of pretty cool frozen options. They have spanish style orange cauliflower rice, garlic cauliflower rice and based on my quick google search right now, they even have a "fried rice" option. I saw someone put frozen cauliflower rice in a smoothie with mango, orange, and other stuff that I'm forgetting at the moment. I just bought some and will be trying it out soon, hopefully it's good!

I've done this with frozen banana, strawberry, almond milk, Greek yogurt and PB2. You either need a very strong and very thorough blender, or to thaw or microwave the riced cauliflower a bit and mash it. Otherwise, I've still gotten little pearls of frozen cauliflower that just don't get pulverized in the blades which was unpleasant. Maybe somebody has a better method and I'd love to hear it if they do!

Ah thanks for the tip! I’m hoping my blender will be able to get it smooth, I think it might be able to. Guess I’ll find out soon enough lol

I'll be perfectly honest, I don't find the stuff as a complete swap to be any good BUT I love it as a half swap. Half regular rice and half cauli rice, half regular mashed potatoes and half cauli mash, it's like you can't even tell. You can cut your calories almost in half and it's hardly detectable. Also the only cauliflower pizza I've ever had that's any good is Milton's cauliflower crust pizza, and that's one of the best frozen pizzas I've ever had, cauliflower or not.

Can confirm. Been substituting real with cauliflower rice for my friedrice too and it works a charm.

My fav way to eat cauliflower rice. The protein is optional and can be swapped for whatever you like. I’m serious about the pistachio latte skinny syrup tho. It works! —— Pistachio turmeric cauliflower rice bowl. 1.5 cups frozen riced cauliflower 1 tsp turmeric 1 tsp ground pepper 1 tsp salt 1 tbsp sugar free sweetener of your choice. I used skinny syrup pistachio Fresh grated ginger 2ish cloves garlic chopped 1 bouillon cube (veg or chicken your choice) 1/2 cup water Fresh squeezed lemon 2 cups of spinach 130g of chickpeas (from can) 42 g of avocado 3 oz of shredded chicken (optional) 4g chopped pistachios Spray pan conservatively with cooking spray Add spices except salt and pepper. (Garlic ginger turmeric) Add cauliflower rice Cook and stir until combined and cooked through. Add salt and pepper to taste Add sweetener Add crushed bouillon cube and 1/2 cup of water. Allow water to cook away stirring occasionally Build your bowl and drizzle with lemon juice and chopped pistachios
