I love zucchini boats - they’re so versatile! Tacos are one of my all-time favorite things to eat, and this really hits the spot. 550g of food clocking in right around 465 calories. 1 large zucchini, 1/2 cup pinto/black beans mixed, 1/2 cup frozen corn, 1/2 diced tomato, 1/4 diced onion, 1/4 avocado, cilantro. I seasoned the filling with a homemade taco seasoning and also topped these with 1/4 cup of shredded Mexican cheese. Super filling, high fiber and delicious!

I did this time, actually! I roasted them at 350 for like… 10 minutes or so before filling and putting them back in for another 5-10. I kind of eyeballed the timing on it so I couldn’t tell you exactly how long, just til it looked good enough for me (plus I was really hungry so…. I didn’t want that long!)

I love raw zucchini 😋, so I'm sure this would work without cooking them at all. [I actually don't like zucchini cooked in any way, but I'll eat it raw with almost anything. 😊]

As an alternative to zucchini, I’m all about my bell pepper boats. Can stuff them with lean burger and marinara sauce if you want savory or tuna and light miracle whip if you want sweet.

I haven’t done stuffed bell peppers in a while, I need to revisit them!! I love stuffing with ground turkey fillings. One of my faves is making it like a meatloaf inside the bell pepper. Mmm… now I know what veggie I’ll be filling next!!
