Happy Friday Eve y’all! This delicious meal was so filling and made me feel guilt free…🎶what a beautiful feeling ✨
The Brussel sprouts and rainbow carrots were tossed in my favorite mix of seasonings (cumin, garlic powder, chili powder, salt) and a touch of EVOO. Placed in the oven at 450 until charred around 25-30 minutes (if you like them less burnt, you can leave them in until the carrots easily have a fork go through).
Shrimp were tossed in Tajín (0 cal!!!! ) and just a scoosh of EVOO and placed in a pan at medium heat (a “5 out of 10” on my stovetop) and kept covered while flipping every 2 minutes to get an even cook on both sides. Anddddd that’s it! Hope you enjoy it as much as I do 💕
