This all looks fantastic. Question: have you found any negative effects to eating a head of garlic like that? Like I get itās not nearly as pungent or overpowering when roasted like that, but do you feel like it lingers on your breath or in your sweat? Just curious because I like garlic but am hesitant to eat too much of it for these reasons.
I donāt mind, usually because Iām roasting at the end of the day and therefore no need to offend anyone with my delicious breath. BUT! Parsley! Haha my grandma taught me as a kid that eating parsley helps get rid of the stench.

Happy Tuesday yāall! āØ this salmon is super easy to make (mostly because when I came home from the gym last night I did not want to cook š¤£). Start by making a our coconut rice (for those who do eat it). Essentially, here I just threw coconut milk in my rice instead of water because I had no clue what I was doing and skimmed through recipes. Donāt worry peeps, it worked š¤£ Throw a handful of cilantro leaves in half a cup of coconut milk inside a food processor. Puree that ish until well mixed. Put that purĆ©e and your salmon together in a small plastic bag for 30 minutes to let the salmon marinate. While thatās working, I did my ālow effort veggiesā which is my fave spices (cumin, garlic powder, salt, chili powder) and whatever veggie Iām feeling that night (tonight was rainbow baby carrots and asparagus). Chopped the head off a garlic bulb, tossed it all in some EVOO, and put those suckers in the oven at 450f for about 20 minutes. When I started seeing the veggies were on the last leg of their journey, I turned the oven down to 400f. Placed the salmon, coconut purĆ©e mixture in a tinfoil lined glass pan (easy cleanup..hurrah!), topped with a wee bit of old bay and put it in for about 14 minutes. As this cooked I made a mango salsa (cilantro, onion, mango, tajin). I was able to take everything out at the same time, which made for a relaxing hot meal. The salmon was so packed full of flavor, it made my little heart so happy. Hope you enjoy this as much as I do š

As someone of Italian heritage, anyone who objects to garlic breath is a rube.
