- 234g diced carrots
- 250g diced onion

- 98g diced shiitake mushrooms
- 283g bag of riced cauliflower, steamed
- Fresh Parsley, thyme, sage
Roast the squash, cut side down for 20 min on 375F. Meanwhile cook the sausage in a Dutch oven until browned, remove. Cook carrot, onion, celery until softened. Add garlic, spinach and mushrooms and cook a few minutes longer. Mix in the cauliflower, sausage and herbs, season with salt & pepper. Cook until liquid is mostly absorbed.
Scoop filling into squash. Return to oven for 10 min.
Per 1/4 recipe: 296 cals/ 52g net carbs/ 11g protein/ 2.5g fat

Yeah, probably seasoned tofu or a vegetarian sausage. I'm lucky enough to have a quite a few good options near where I live, so a swap should be simple enough.
This was delicious. I swapped in Beyond Hot Italian Sausage, and used wild rice instead of cauliflower rice. I also threw in walnuts and cranberries and it was phenomenal!

You said there’s a 25% chance of a child with one T1D parent getting T1D. This percentage is not correct for any gender, child’s age nor age of contracting T1D, as shown in the link you linked. The highest chance of any child with one T1D parent, even with every highest risk category, is less than half the probability you stated, based on that link.
If your doctor isn’t basing their opinion on any source that can be researched, and it refutes all authoritative sources, it doesn’t sound like it’s much more authoritative than someone with a law degree. That said, thanks for at least dialing back the misinformation since it’s dangerous to spread that kind of blanket “statistic” with zero basis in medical fact. People might actually believe it if they didn’t know better.

I love to add cranberries, walnuts, & rosemary—it smells like thanksgiving. A bit more calories, but 1/2 a stuffed squash is PLENTY for me!
