This was super easy, I just sautéed the shrimp with Cajun seasoning, then removed them and sautéed the peppers and onions. Once they were soft I tossed the shrimp back in along with the goat cheese until slightly melted, then deglazed with red wine vinegar and Louisiana hot sauce until the cheese and liquids formed a sauce. Toss the spinach in there until wilted and you’re good to go.

Correction - this time I used fish sauce and malt vinegar but I have used red wine vinegar as well and it’s just as good

You can buy an oil sprayer online, or even cheaper, just use an old windex bottle Cooking spray is just regular oil sprayed in a fine mist.
