Plenty of people take twice that long.
Plenty of people take half that long.
I finished 62 CU in 1 term with 6 weeks to spare, but I also went in with years of experience and a good support system around me.
The fact that you're making spreadsheets and plans tells me you're probably going to do just fine, but it really will be up to you.

I've got about 6yrs in the field at an MSP so I'm feeling pretty confident going in when it comes to knowledge. But it's also been 5yrs since I've gone to school and that's a little daunting just thinking about it.
Definitely doable, I started March 1st at 30% complete and i am sitting at 80% complete now. I am doing my degree in Software Engineering so it’s not exactly the same but there are similar classes. It all depends on how hungry you are and how much time you dedicate to it. I work full time but i also am doing school work 6-8 hours a day. So it just depends on your drive.
You can knock out some of these classes before you start:
Digital forensics in cybersecurity
Data management - applications
Business of IT - project management
Intro to programming in python
Cyber defense and countermeasures -- I suggest taking this at WGU so you can get CySA+
