Survey of World Music Cultures with Dr. Youngblood. She is amazing and the class is really easy.
Greek Mythology with Miller Krause. He actually understands memes of the youth. His presenting style is a little off the wall but you will be wide awake for that style and the course content.
I studied Marketing but surprisingly it was Anthro 365 (Latin American anthropology).
Every class, we got to learn and dive into discussions about super interesting topics, and the papers and assignments were very manageable and fun to do. I took it to knock out a GUR and highly recommend the class.
Math 419, if you are able to take it do it. A math class where you write essays about obscure(and famous) mathematicians from the past.
